Kothu Porotta (or Koththu) originates from the streets of Kerala and Tamil Nadu, where flaky flatbread is shredded on a hot griddle and tossed with spices, curry, and protein. The sound alone — metal blades rhythmically chopping the porotta — is part of the experience.
