When people think of Indian food, they often picture rich curries, naan bread and creamy butter chicken. But India is a country of extraordinary regional diversity, with every state offering its own flavours, ingredients and cooking traditions.
One of the country’s most distinctive culinary regions is Kerala, often called “God’s Own Country.” Situated on India’s south-west coast, Kerala is famous for its spice plantations, coconut groves, Arabian Sea seafood and centuries of influence from Arab, Portuguese, Dutch and British traders.
At Kerala Canteen in Leeds, our mission is to introduce guests to the authentic flavours of Kerala while celebrating the exceptional produce of Yorkshire.
1. Coconut Is at the Heart of Kerala Cooking
Unlike many North Indian dishes that rely on cream, butter or yoghurt, Kerala cuisine is built around coconut.
Fresh coconut, coconut milk, coconut oil and roasted coconut are used to create layers of flavour without making dishes overly heavy.
This gives Kerala food its distinctive richness while allowing the natural flavours of spices and fresh ingredients to shine.
2. Black Pepper Before Chilli
Long before chillies arrived in India, Kerala was known as the Land of Pepper.
The region produces some of the world’s finest black pepper, cardamom, cinnamon, cloves and nutmeg, making spice the foundation of every meal.
Kerala food is not simply hot, it is deeply aromatic, balanced and layered with flavour.
3. Seafood and Local Produce
With over 350 miles of coastline, seafood plays an important role in Kerala cuisine.
Fresh fish, prawns, mussels and crab are cooked with coconut, tamarind, curry leaves and freshly ground spices.
At Kerala Canteen, we combine these traditional recipes with high-quality Yorkshire ingredients, bringing together the best of both regions.
4. Curry Leaves Are Essential
Unlike coriander, which is often added as a garnish, curry leaves are cooked into the dish from the very beginning.
Their unique citrusy, earthy aroma is one of the defining characteristics of Kerala cuisine.
Combined with mustard seeds, dried chillies and coconut oil, they create the unmistakable flavour that makes Kerala food so distinctive.
5. Every Region Has Its Own Recipes
Just as Italy has different food traditions from north to south, Kerala’s cuisine changes from district to district.
The seafood-rich south, the spice-growing central region and the Malabar coast in the north each have their own cooking styles.
Recipes are shaped by local ingredients, religious traditions and centuries of cultural exchange.
This diversity is something we proudly celebrate at Kerala Canteen.
6. Bread Is Different Too
Many people associate Indian food with naan.
In Kerala, naan is rarely eaten.
Instead, traditional accompaniments include flaky Kerala porotta, appam, puttu, idiyappam and dosa, each offering a completely different texture and eating experience.
Our handmade Kerala porotta remains one of the restaurant’s most popular dishes.
7. Authentic Flavours Without Compromise
At Kerala Canteen, we believe authentic regional cuisine should remain true to its origins.
Rather than adapting recipes to suit expectations of what Indian food “should” taste like, we celebrate the original flavours of Kerala.
From our Trivandrum Fried Chicken and Curry Leaf Calamari to our Beef & Bone Marrow Curry, every dish is inspired by recipes from Consultant Chef Bobby Geetha’s hometown and developed alongside Executive Chef Abdulla Khader Allingal Siddique, whose experience includes the prestigious Taj Group of Hotels and working alongside Michelin-starred chefs.
8. Kerala Meets Yorkshire
Our philosophy is simple:
Authentic Kerala recipes. Exceptional Yorkshire produce.
That approach has inspired signature dishes such as our Beef Curry Pie, Kerala Sunday Roast with Curried T-Bone Steak in a Giant Yorkshire Pudding, and our collection of Kerala-inspired spice-infused cocktails.
Rather than changing Kerala cuisine, we celebrate it while embracing the outstanding farmers, fishermen and producers of Yorkshire.
